Ingredients:

  • 4 whole wheat tortillas
  • 4 large eggs

Instructions:

  1. In a non-stick skillet, heat a small amount of olive oil over medium heat.

  2. Add the diced bell peppers, onions, and tomatoes to the skillet. Sauté until they become tender.

  3. In a separate bowl, whisk the eggs together. Pour the whisked eggs into the skillet with the sautéed vegetables. Season with salt and pepper to taste.

  4. Cook the eggs and vegetables, stirring occasionally, until the eggs are scrambled and fully cooked.

  5. Warm the whole wheat tortillas in the microwave for a few seconds or on a preheated skillet.
